Sesame Peanut Zoodle with Crispy Tofu


  • 1 block firm tofu
  • 1/4 cup low-sodium soy sauce
  • 1 Tablespoon peanut or canola oil
  • 1 Tablespoon cornstarch
  • 1/2 teaspoon minced fresh ginger
  • 1-2 cloves minced garlic
  • 2 Tablespoon low-sodium soy sauce
  • 2 Tablespoon sesame oil
  • 2 Tablespoon creamy peanut butter
  • 1 1/2 Tablespoon rice vinegar
  • Honey to taste (start with 1 Tablespoon)
  • 2-4 (depending on size) zucchinis spiralized


  1. Preheat oven to 425 (F)
  2. Slice tofu into bite size pieces
  3. Dry tofu in desired method (I recommend press method, see video for details!)
  4. Once tofu is dry to the touch, place in bowl and combine gently with soy sauce, oil, and cornstarch
  5. Spread tofu in a single layer on baking sheet already lined with parchment paper
  6. Bake for 15 mins, flip tofu over, and cook for another 15 mins (30 total)
  7. For the sauce, combine the ginger, garlic, soy sauce, sesame oil, peanut butter, rice vinegar and honey in a bowl
  8. Place the zoodles (spiralized zucchini) in a pan over medium heat until heated through
  9. Add sauce and toss to combine
  10. Add tofu and voila! Dinner is served!
