Salmon, Veggies, and Rice (in 30 mins!)


  • Coconut Oil
  • Green beans or asparagus
  • 1/4 lb salmon (or fish of choice)
  • 1 T butter
  • 1/2 onion
  • 2 cloves garlic
  • 2 cups fresh spinach
  • 1 cup leftover brown rice (or freshly made or none at all, doesn't matter!)
  • Salt, pepper, and other seasonings as preferred


  1. Preheat oven to 350 F
  2. Spray tin foil with coconut oil
  3. Place green beans on the bottom of foil and season
  4. Place salmon in the middle of the foil and season
  5. Seal up foil pack and bake for 20 mins
  6. Meanwhile, sauté chopped onions in butter
  7. Add garlic and cook until fragrant
  8. Add spinach and cook down, stirring occasionally
  9. Add rice and heat in pan *optional
