Chocolate Covered Banana Chia Pudding

Ingredients

  • 1 ripe banana
  • 2 Tablespoons chia seed
  • 2/3 cup coconut milk (or any other milk of choice)
  • Dash of cinnamon
  • 1/4 cup unsweetened cocoa powder
  • 5 Tablespoons chia seed
  • 1 1/3 cup coconut milk
  • 1 teaspoon vanilla extract
  • Stevia for sweetening (or any other natural sweetener of choice, honey, maple syrup, etc.)

Instructions

  1. Mash banana with fork in small bowl
  2. Add coconut milk, chia seeds, and cinnamon
  3. Combine together and sweeten to taste with desired sweetener
  4. In a separate bowl, combine cocoa powder, chia seed, coconut milk, and vanilla
  5. Sweeten to taste with desired sweetener
  6. Cover both bowls and refrigerate for 1-4 hours or overnight (will vary depending on how soft you like your chia seeds to be)
